We're going bananas – yes, b-a-n-a-n-a-s – for today's cocktail. The Fay Wray was originally created by Matthew Belanger, head bartender at Donna bar in Brooklyn, NY, before it closed during Covid. It's also cleverly named after early "scream queen" Fay Wray, the Canadian-American actress who starred in the 1933 film King Kong.
Banana can be a challenging flavor to pull off in a cocktail, but trust us when we say it's done very well here thanks to the addition of Tempus Fugit Crème de Banane, which has quickly become a staple in our bar. Utilizing a 19th century recipe that incorporates real banana extract and cognac, the resulting golden amber spirit is au naturel. And the flavor is anything but artificial.
The Fay Wray is everything you love about a traditional tiki drink, with a fruity and dry profile elevated by subtle notes of banana, tart lime and warm cognac and rum.
