Originally crafted by Zac Overman for Tiki Night at the now-closed Fort Defiance in Brooklyn, this creative twist on the traditional colada features Angostura as a primary spirit alongside rum. To complement the bitters' boldness, we recommend using a Jamaican pot still rum that can hold its own. One thing is non-negotiable, though: the drink’s namesake bitters.

Ingredients

  • 1 ½ oz. Angostura Bitters
  • ½ oz. Smith & Cross Rum
  • 1 oz. Lime Juice
  • 1 ½ oz. Cream of Coconut
  • 2 oz. Pineapple Juice
  • Fresh or Dehydrated Pineapple (garnish)

Directions

  1. Add all ingredients to a Hybrid Cocktail Shaker with ice and shake for 15-20 seconds.
  2. Strain into a cocktail glass filled with pebbled ice.
  3. Garnish with pineapple and serve with a straw.
