El Chapo

Created by Nashville bar owner Ben Clemons, El Chapo is a refreshing alternative to the Aperol Spritz, subbing beer for bubbles. Specifically, grapefruit radler from Stiegl, Austria's leading privately owned brewery.


A radler combines real fruit juice and beer for a low-alcohol, light beverage with irresistible effervescence. If you don't love grapefruit, you can also find it in lemon and raspberry flavors. Whatever you choose, it'll go great with the gin and Aperol, resulting in a bittersweet, citrusy apéritif.


Be sure to infuse your Aperol a day in advance for El Chapo. It's fairly simple to make and you can store it in the fridge for future spritzes.

Ingredients

  • 1 ½ oz. Botanist gin (or London Dry)
  • 1 oz. strawberry-infused Aperol
  • Chilled Stiegl-Radler grapefruit beer, to top
  • Garnish with a strawberry

Directions

  1. Fill a 16 oz. mason jar halfway with fresh strawberries.
  2. Pour Aperol to the top and refrigerate overnight.
  3. Strain the solids and store in the refrigerator.
  4. Shake the gin and strawberry-infused Aperol in a Hybrid Cocktail Shaker with ice.
  5. Pour into a Hybrid Cocktail Glass over a large ice cube.
  6. Top with beer and garnish with a fresh strawberry.
