Created by Leo Robitschek for the Nomad Hotel in NYC, Paris is Burning brings the sweetness of the pineapple and smokiness of the mezcal together to make an incredibly balanced cocktail while the subtle botanicals of the gin round out the finish, effectively backing the mezcal without overpowering it.
Split-base cocktails - splitting the base spirit between two (or more) ingredients - often yield flavorful experiences without requiring adventurous bottles or breaking the bank. The addition of a second liquor can enhance certain flavors that non-alcoholic mixers simply cannot.

1 oz. Mezcal
1 oz. London Dry Gin
1 oz. Pineapple Juice
½ oz. Lemon Juice
½ oz. Elderflower Liqueur
¼ oz. Simple Syrup
Angostura Bitters (to top)
Add all ingredients into your Hybrid Cocktail Shaker.
Shake vigorously for 8-10 seconds.
Double-strain into a coupe or cocktail glass.
Top with Angostura bitters.
Consider the level of smokiness when opting for a mezcal, but don’t forget: with a split-base cocktail like this one, it is safe to explore more flavorful options.
For a more frothy head, try dry shaking (without ice) for a few seconds before adding in the ice.
