Harry’s Bellini takes the sunny, peach-forward spirit of the classic and gives it a playful twist with rye whiskey. The result is brighter, spicier, and far more layered than your average brunch spritz. Fresh mint lifts the aromatics, lemon adds snap, and prosecco keeps everything light on its feet, while the rye brings just enough structure to balance the fruit.
The drink gets its name from Harry’s, the cocktail bar companion to Judy & Harry’s in Asbury Park, a spot inspired by the larger-than-life parents of co-owner Neilly Robinson. True to that energy, the cocktail feels celebratory and full of personality. We made a small adjustment to the original build, dialing back the peach liqueur and leaning more heavily on fresh purée. That swap lets the peach shine without overpowering the glass. It’s a Bellini that happily lives beyond brunch and proves a splash of rye can change everything.
