While margaritas will always have a special place in our hearts, palomas are right up there with them. A solid choice for the spring and summer seasons, the paloma cocktail shares many of the same ingredients, but yields a subtler sweetness as tangy pink grapefruit takes center stage alongside tequila blanco.
Today's recipe kicks things up a notch with a touch of smoke and herbs from the addition of mezcal and fresh lavender syrup (quite simple to make at home with dried lavender buds, sugar and water). The result is fresh, citrusy and every-so-slightly floral.
Enjoy it in a Hybrid Cocktail Glass on the patio when the sun is shining and the birds are singing. It's happiness in a glass, or at least a step in the right direction.

Ingredients:

1 ½ oz. Tequila Blanco

1 ½ oz. Mezcal

1 ½ oz. Fresh Pink Grapefruit Juice

1 oz. Lavender Syrup (recipe below)

½ oz. Fresh Lime Juice

1 Ripe Pink Grapefruit

Club Soda
Directions:
Lavender Simple Syrup
Bring 2 cups of water to a boil in a small pot.
Add 1 TBSP of dried lavender buds, remove from heat and let steep for 10 minutes.
Add 3 cups of sugar and stir until dissolved.
Finely strain the syrup into a container and store in the fridge up to two weeks until ready for use.
Cocktail Preparation
Add ice to a Hybrid Cocktail Shaker and combine the tequila, mezcal, grapefruit juice, lime juice and lavender syrup.
Shake vigorously for 10 seconds to chill and dilute, then strain into a Hybrid Cocktail Glass over a large ice cube.
Top with club soda and garnish with pink grapefruit.
