If you’re ready for fall flavors but not quite ready to go full pumpkin spice, the Lion’s Tail is a pretty good place to start.
This bourbon-based classic combines whiskey with allspice dram, a richly spiced liqueur packed with notes of cinnamon, clove, and nutmeg. Fresh lime juice cuts through all that warmth with a bright, tart kick, while a touch of simple syrup and bitters rounds everything out.
The result is bold, balanced, and just cozy enough for the start of fall. It’s warming without being heavy and spiced without tasting like a candle.
Shake one up for happy hour, a cool September evening, or anytime you’re ready to ease your way into whiskey season. And yes, we could make a “mane event” joke here. But we’ll restrain ourselves.

1 ½ oz. Bourbon
½ oz. St. Elizabeth Allspice Dram
¾ oz. Fresh Lime Juice
¼ oz. Rich Demerara Syrup
2 dashes Angostura Aromatic Bitters
Lime Wheel Garnish
Add ingredients to your ice-filled Hybrid Cocktail Shaker.
Shake for 20-30 seconds.
Strain into a chilled coupe.
Garnish with a lime wheel.
