By blending the sweet, tropical notes of ripe mango with the savory freshness of cherry tomatoes, this cocktail is a sip of summer in the middle of winter. The combination of tequila and Cointreau adds a classic margarita foundation, while the addition of hot honey syrup introduces a delightful kick that complements the sweetness of the fruit. Ingredients:
2 oz. Blanco Tequila
1 oz. Mango Juice
¾ oz. Cointreau
¾ oz. Hot Honey Syrup (2:1 honey/water)
¾ oz. Lime Juice, freshly squeezed
3 Cherry Tomatoes (for muddling)
Flaky Sea Salt and additional cherry tomatoes (for rim and garnish)
Make Hot Honey Syrup: Mix 2 parts hot honey with 1 part water in a small saucepan. Bring to a boil, stir until the honey is dissolved, then let cool. Store in the fridge for up to two weeks.
Prepare Your Glass: Rub a lime on the rim of your Hybrid Cocktail Glass or dip it in agave nectar, then coat with sea salt.
Muddle Tomatoes: Use a muddler to mash three cherry tomatoes at the bottom of the cocktail glass.
Mix Cocktail: In a Hybrid Cocktail Shaker, combine tequila, mango juice, lime juice, Cointreau, and hot honey syrup. Shake for 15-20 seconds and strain into the glass over the muddled tomatoes.
Garnish and Serve: Add a cherry tomato or two to a cocktail pick. Enjoy!
