Created by Leo Robitschek, beverage director at The Nomad Hotel and Eleven Madison Park in New York City, the Mott & Mulberry is an autumnal riff on the Whiskey Sour that’s both warming and refreshing. With a perfect balance of seasonal ingredients, it offers a layered complexity that makes it a standout for those looking to explore new whiskey cocktails.
At its core, the Mott & Mulberry combines rye whiskey, apple cider and amaro. The rye provides a spicy foundation, while the cider adds natural sweetness. What truly sets this cocktail apart, however, is its versatility—by varying the cider or amaro, the flavor profile can shift in countless directions. We also opted to add egg white to our version, for that signature Whiskey Sour foam and a slightly richer texture.

1 oz. Rye
1 oz. Amaro (preferably Luxardo Amaro Abano)
¾ oz. Apple Cider (or Apple Juice)
½ oz. Fresh Lemon Juice
½ oz. Rich Demerara Syrup
1 Whole Egg (for Egg White)
Apple Slices For Garnish
Add all ingredients except egg white to Hybrid Cocktail Shaker and dry shake (without ice) for 15-20 seconds.
Add egg white and one large ice cube to your shaker.
Shake again for 20-30 seconds.
Strain into a coupe and garnish with apple slices.
