This week, we're crafting a legendary tiki cocktail - Mr. Bali Hai.
This storied cocktail, synonymous with the Bali Hai Restaurant, was shaken into existence shortly after the establishment opened its doors in 1954, nestled on the serene northern end of Shelter Island in San Diego, CA.
Enjoy the perfect harmony of rums, coffee liqueur, pineapple, lemon, and just the right amount of sweetness.

1 ½ oz. Smith & Cross Jamaican Rum
1 oz. White Rum
¾ oz. Mr. Black Coffee liqueur
1 ½ oz. Pineapple juice
1 oz. Lemon juice
½ oz. Simple Syrup
Mint bouquet
Pineapple chunk
Combine Jamaican Rum, White Rum, Coffee Liqueur, Pineapple Juice, Lemon Juice and Simple Syrup in your Hybrid Cocktail Shaker.
Add ice and shake to chill.
Strain into your Hybrid Cocktail Glass over crushed ice.
Garnish with spanked mint bouquet and fresh pineapple chunk.
Over the years, the actual recipe for the Mr. Bali Hai has been debated. There are several variations from various sources, some very credible. For example, Jeff "Beachbum" Berry published a recipe in his 2009 book Beachbum Berry Remixed. While it doesn't seem aligned with the ingredients on the Bali Hai menu, it appears to be one of the most commonly used recipes.
