At first glance, the idea of olive oil in a cocktail might raise a few eyebrows—but trust us, it works.
Created at Minneapolis’s Marvel Bar (now closed) in 2011, the Oliveto quickly became a fan favorite for its silky texture and bright, citrus-forward flavor. At its core, it’s a gin sour, but with a twist: extra-virgin olive oil and Licor 43, a Spanish liqueur laced with vanilla and spice. The result? A frothy, silky, emulsified delight that’s way more polished than it has any right to be.
We gave ours a touch more Licor 43 to highlight the vanilla notes, but feel free to play with the ratios to suit your taste—or stick with the classic recipe below. However you shake it, the Oliveto is bright, elegant and just intriguing enough to wow your cocktail-savvy friends.

Ingredients:
2 oz. Gin
1 oz. Lemon Juice
¼ oz. Licor 43 (we preferred ours with ½ oz.)
½ oz. Extra Virgin Olive Oil
¼ oz. Simple Syrup
1 large Egg White
Directions:
Add the gin, Licor 43, olive oil, lemon juice, simple syrup and egg white to your Hybrid Cocktail Shaker.
Dry shake the ingredients for about 30 seconds.
Add ice cubes and continue shaking vigorously.
Strain into a coupe or martini glass and allow the foam to rise to the top. Serve immediately.
