As fig season winds down, we’re shaking up something special. The Sparkling Vanilla Fig is our kind of fall cocktail—earthy, aromatic, and just indulgent enough. Muddled figs bring rich texture and jammy depth, while lemon juice, honey syrup, and gin brighten things up. Topped with sparkling rosé, it’s fizzy, refreshing, and effortlessly elegant.
While many fig cocktails lean on vanilla syrup or bean paste, we opted for a splash of Licor 43. This Spanish liqueur delivers warm vanilla notes with a subtle herbal twist that blends beautifully with fig and honey. A dash of orange bitters and a sprig of thyme take things up a notch, making this the perfect sip for cozy evenings, festive dinners—or just because it’s Friday.

Ingredients:
2 Figs, muddled
1 ½ oz. Gin
½-1 oz. Lemon Juice, freshly squeezed
½ oz. Honey Syrup (2:1 ratio)
½ oz. Licor 43
2 dashes Orange Bitters, optional
Sparkling Rosé, to top
Garnish: Sliced figs and fresh thyme
Directions:
To make the honey syrup, combine 1 cup of honey with ½ cup of water in a pot over low heat until dissolved. Let cool and store in the fridge.
Muddle two ripe figs at the bottom of your Hybrid Cocktail Shaker along with lemon juice and honey syrup.
Add ice and measure in your gin and Licor 43.
Add bitters and shake vigorously for 20 seconds.
Muddled fruit will clog the shaker's strainer, so be sure to open the tumbler and pour the mixture through a fine mesh strainer into a wine glass filled with ice.
Top with chilled sparkling rosé and garnish with sliced figs and fresh sprigs of thyme.
