While I love coffee, I have a real passion for tea. There are so many variations that almost anyone can find a flavor profile that fits their palate. Earl Grey tea is one of my favorite go to teas as I love how the black tea and bergamot citrus oils blend together and create a bold, yet approachable flavor profile that works both with and without milk. As an Anglophile, I am fascinated by this history of how the tea got its name. It is said that the tea was a gift to Charles Grey, 2nd Earl Grey of England for his part in ending the trade monopoly held by the East Indian Company between Britain and China. In a glass container, combine the gin and tea leaves. Seal the container and shake. Let sit at room temperature for at least 2 hours (and up to 8 hours).
Strain gently back into the empty gin bottle using a funnel and coffee filter.
