Here is a 1970’s era cocktail that is the signature cocktail at the Atlanta Trader Vic’s.
The recipe I used is an updated version by Martin Cate of Smugglers Cove. He took the template and replaced canned peaches with fresh, peach schnapps with Crème de Pêche, house made coconut cream instead of store bought and added fresh lemon juice.
Also it’s flash blended rather than blended into a slushie.
This is my first time trying this and it’s a banger! It’s like a boozy peach coconut creamsicle. Not too sweet thanks to the added lemon juice for balance. I wished I could’ve used Palisade Peaches but I missed my window and now they are out of season. I opted for the next best thing and used frozen organic peaches. 2 oz. Blended Lightly Aged Rum
3 oz. Orange Juice
1 oz. Coconut Cream (smugglers cove recipe, see below)
5 oz. Lemon Juice
¼ oz. Peach Liqueur
Half a Peach (coarsely chopped)
Muddle peaches in your Hybrid Cocktail Shaker.
Add other ingredients and ice and whip shake.
Pour in your Hybrid Cocktail Glass. Add additional ice to top.
Garnish with spanked mint, a peach slice and grated nutmeg.
