We're big fans of passion fruit in our cocktails (and beers!), so naturally we were excited to discover the Empress of Passion – a recipe by Empress 1908 Gin featuring their Indigo elixir that incorporates eight botanicals inspired by the Fairmont Empress Hotel's (Victoria, BC, Canada) afternoon tea service.
Butterfly pea blossom gives the gin its unique shade which changes with pH levels. So when you add acid like the lemon juice this recipe calls for, you'll see your cocktail transform from a deep indigo to a reddish pink shade. If you want to prolong that purple hue, you can float a bar spoon of Empress Gin on top to get a layered effect..
Balanced and beautiful, the Empress is sure to impress with notes of citrus, herbs, and a subtle sweetness from the passion fruit syrup.
Combine gin, lemon juice, passion fruit syrup and cream of coconut in a Hybrid Cocktail Shaker with ice.
Shake and pour ingredients into a Hybrid Cocktail Glass over a large ice cube. Float an additional 1 oz. of gin on top if you'd like to elevate your cocktail's hue.
Garnish with fresh mint and edible flowers.
