Jet Pilot

Invented at The Luau restaurant in Beverly Hills circa 1958, the Jet Pilot cocktail is a popular riff on the tiki-style Test Pilot originally created by Donn Beach.


This cocktail features three rums blended with bitters, cinnamon syrup and citrus. And while many recipes call for it to be flash blended and served frozen, we opted to shake our ingredients and strain over crushed ice. The result was just as tasty (and less brain-freeze inducing).


The Jet Pilot is a rummy, well-rounded, refreshing drink with interesting flavors. For an herbaceous finish, we like the addition of absinthe. If you prefer a slightly sweeter, anise flavor, go for Pernod liqueur.


After the first few sips, you'll reach cruising altitude. Sit back, relax and enjoy the flight (er, beverage).

Ingredients

  • 1 oz. Hamilton 86 (Black Blended Rum)
  • ¾ oz. Plantation Dark (Blended Aged Rum)
  • ¾ oz. Plantation OFTD (Blended Overproof Rum)
  • ½ oz. Velvet Falernum 
  • ½ oz. Grapefruit Juice
  • ½ oz. Lime Juice 
  • ½ oz. Cinnamon Syrup
  • 1 dash Angostura Bitters
  • 1 dash Absinthe or Pernod

Directions

  1. Shake all ingredients in a Hybrid Cocktail Shaker with ice for about 15 seconds.
  2. Strain into a Hybrid Cocktail Glass filled with crushed ice (or flash blend with ice if preferred).
  3. Garnish with mint and a Maraschino cherry.
