Penicillin

The Penicillin is a modern classic cocktail created by Australian-born bartender, Sam Ross. Sam has made many well-known cocktails whilst spending his time behind the bar at infamous NY cocktail bars such as Milk & Honey, Pegu Club and Attaboy. The Penicillin combines sweet honey and spicy ginger syrup along with a blended whisky and a smoky Islay whisky floated on top.

Ingredients

  • 2 oz. Blended Scotch Whisky
  • ¾ oz. Lemon Juice
  • ⅓ oz. Honey Syrup
  • ⅓ oz. Ginger Syrup
  • ¼ oz. Islay Whisky, float

Directions

  1. In your Hybrid Cocktail Shaker, combine all ingredients except the Islay whisky.
  2. Shake with ice for 10-12 seconds.
  3. Strain over fresh ice into a Hybrid Cocktail Glass.
  4. Float the Islay Whisky.
  5. Garnish with skewered candied ginger or a lemon wheel.
